The composition of nutrients in the fruits of amaranth with different color coat was studied. The protein composition of amaranth seeds was defined. The lipid complex of various types of amaranth has been determined. The oil from amaranth seeds by the method of raw material extraction was obtained. It has been established that amaranth oil approximates to cotton oil in terms of unsaturated fatty acids content.

Processing of fruits generates its seeds and peels as wastes. Disposal of these materials in the environment usually represents a problem that is further aggravated by legal restrictions. Seeds of mango fruit generated as waste during its processing. In the present study attempt has been made to utilize this waste as by product to extract total polyphenols (TPP), which are one of the functional ingredient from plant sources and known to exhibit various health benefits. Seed wastes of Totapuri variety mango fruits were collected and kernels were separated from seed coat.

In vitro studies, aqueous extract of leaves of plants namely Karu (Roylea elegans), Artemisia (Artemisia roxburghiana), Neem (Azadirachta indica), Bana (Vitex negundo), Tulsi (Ocimum sanctum) and seed of Darek (Melia azedarach) were found effective in inhibiting the growth of the B. dothidea causing white rot in apple. These botanicals were mixed together and formulations were made in water (Botanical Formulations 1) and Cow urine (Botanical Formulations 2) on weight and volume basis.

For fulfilling present national and international barriers regarding the use of chemical food additives in food processing and preservation, exploration for biological and plant derived food additives have also remarkably increased. So present study was imagined with the purposes to check the shelf life of goat meat patties incorporating with Amla fruits extract and Amla seed coat extract as natural preservatives and to assess their effect on physicochemical and sensory attributes of the product under vacuum packaged refrigerated (4±1oC) storage.

Enrobed or coated chevon ball containing natural antioxidant TP (Tea polyphenol), GSE (Grape Seed Extract) at a level of (0.75%) in the batter mix were cooked and stored under refrigeration temperature (4±1°C) for evaluation of quality. Test samples were compared to control and Synthetic antioxidant BHA (Butylated Hydroxyanisole) containing enrobed chevon balls.

Tamarindus indica L. is a multipurpose tropical tree used primarily because its fruits and leaves have eatable properties. Both parts of the plant have also medicinal uses, but in the specific case of the leaves, little information about their chemical composition is available. The study was conducted to determine the phytochemical composition and antibacterial activity. Extract of Tamarindus indica leaves, fruit and seed coat powders were prepared in different solvent media viz. aqueous, aqueous methanol.
