This study aimed to quantify the phenolic contents and the antioxidant capacities of leaf extract powders from three Myrtaceae plants, namely Cleistocalyx operculatus (Vietnamese name: Vối), Psidium guajava (Ổi), and Rhodomyrtus tomentosa (Sim), investigate their inhibitive activities on the growth of bacteria isolated from spoiled shrimps, and evaluate their values as preservative agents in the cold storage of Pacific whiteleg shrimps (Penaeus vannamei).

In this study, the sensory, microbiological, and biochemical qualities were used to examine the quality of Pacific white shrimps (Litopenaeus vannamei) preserved at 0°C during a 10-day period. The sensory quality was evaluated by a quality index (QI) that resulted from a quality index method (QIM) scheme. Meanwhile, the total viable count (TVC) and K-value were used to assess the microbiological and biochemical qualities of the shrimp.

Carrageenan was extracted from Kappaphycus alvarezii alga for application in shrimp preservation to reduce the loss of dry matter during preserving frozen shrimp. The main material in this study is dried alga. The solution 3% NaOH was used to remove color compounds and lipids.

Changes in melanosis, microbiology, and fat oxidation in Pacific white shrimps (Litopenaeus vannamei) when treated with Houttuynia cordata extract (designated E-DC) were monitored during cold storage for seven days at 20 C. Whole shrimps treated with E-DC solution (0.025%, w/v) revealed slow growth of total aerobic microorganisms, Enterobacteriaceae and Pseudomonas aeruginosa, throughout cold storage in comparison to the control sample treated by water (p0.05).
