Ebook "From sugar to splenda: A personal and scientific journey of a carbohydrate chemist and expert witness" arises from the lawsuit brought by Tate & Lyle against companies accused of infringing its patents for sucralose, the sweet ingredient in the artificial sweetener SPLENDA which is made by chlorinating sugar. From a 1958 undergraduate intern witnessing the pioneering experiments on sugar chlorination, to being the 1991 recipient of the world’s premiere prize for carbohydrate chemistry, Fraser-Reid was groomed for his role as expert witness in the mentioned lawsuit.

In our current phytochemical investigation on the Tunisian plant Lycium arabicum Schweinf. ex Boiss., we attempted to explore the oil obtained from its fruits. This oil was extracted by cold maceration with ethanol and was analyzed to estimate its sterol and fatty acid content. The physicochemical parameters of the oil were also examined. They were specified in terms of acid value (0.8 ± 0.01 mg KOH g–1 oil), peroxide value (10.9 ± 0.02 meq O2 kg–1 oil), saponification value (162.97 ± 0.03 mg KOH g–1 oil), chlorophylls (1.011 ± 0.03 mg kg–1 oil) and carotenoids (42.1 ± 0.05mg kg–1 oil).

The selection of a wound dressing is crucial for successful wound management. Conventional dressings are preferable for the treatment of simple wounds. However, a bioactive wound dressing that supports wound management and accelerates the healing process is required when it comes to treating non-self-healing wounds. 2-deoxy-D-ribose (2dDR) is a small deoxy sugar that naturally occurs in human body.

Storage tubers and root crops are important sustenance food crops grown throughout the world. Despite the availability of genome sequence for sweet potato, cassava, carrot and sugar beet, the molecular mechanism of root-derived storage organ development remains completely unexplored. Considering the pivotal role of PTBs and their target RNAs in potato storage organ development, we propose that a similar mechanism may be prevalent in storage root crops as well.

The SWEET proteins are a group of sugar transporters that play a role in sugar efflux during a range of biological processes, including stress responses. However, there has been no comprehensive analysis of the SWEET family genes in Brassica oleracea (BoSWEET), and the evolutionary pattern, phylogenetic relationship, gene characteristics of BoSWEET genes and their expression patterns under biotic and abiotic stresses remain largely unexplored.

The Indian Traditional Sweet (Instant Sheera Mix) is a blend of semolina, wheat flour and moong dal flour roasted with ghee & furnished with the Indian mango flavor which has significant amounts of proteins and carbs along with high energy content. The formulation and standardization of blended Instant Sheera Mix was conducted in order to develop innovative formulation of Sheera Mix and study the changes in Sheera quality during storage. The blending of semolina, foxnut, wheat flour, moong dal flour, sugar was done.

SWEETs play important roles in various biological processes, including plant growth, development, and response to environmental stimuli. Previously, we comprehensively found a total of 28 members of MeSWEET gene family in cassava (Manihot esculenta Crantz). Most of MeSWEET genes had 6 exons and 5 introns. In this study, 6 MeSWEET duplicated pairs, including 5 segmental and 1 tandem duplication events were manually predicted in cassava genome.

All the jam samples prepared from sweet potato were stored in sterilized glass jars and evaluated physicochemically for ascorbic acid, pH, total soluble solids, reducing sugars and non-reducing sugars, total sugar and sensory evaluation for an interval of 0 day, 30 days, and 60 days. For jam preparation treatment TSP-12-14 (100%) shows better biochemical retentions up to 60 days of storage along with good overall acceptability.

Now a days sugar free food are very much popular because of their less calorie content. So food industry uses various artificial sweeteners which are low in calorie content instead of high calorie sugar. Artificial sweeteners/low calorie sweeteners are synthetic sugar substitutes but may be derived from naturally occurring substances, including herbs or sugar itself. The growing consumer interest in health and its relationship with diet has led to a considerable rise in the demand for low calorie fat products.
