Tender coconut water

Pulsed light is an emerging non thermal processing technology used for food decontamination. A laboratory scale pulsed light treatment chamber was designed and fabricated. In this study, tender coconut water was exposed to pulsed light to inactivate the E. coli using different process parameter such as juice layer depth (5, 10, 15 and 20mm), shelf height (5, 10 and 15cm) and number of pulses (60, 120, 180 and 240 flashes) corresponding to an fluency of 4.8, 9.6, 14.4 and 19.2J/cm2 .

The penetration depth of UV light in coconut water is more because of the UV absorption coefficient of coconut water is less, thus it facilitates UV rays to pass through it. By considering all above factors, the present study was aimed to study the effect of UV-C treatment on some physicochemical properties of tender coconut water.

Presently thermal treatment is most commonly applied for inactivating enzymes in coconut water. Thermal treatment required less maintenance and low energy consumption. By considering the facts, the present experiment was aimed to study the effect of thermal treatment on bioactive components and enzyme activity kinetics.
