  • The research aimed to assess the effects of methyl jasmonate (0.25, 0.5, and 1.0 mM MeJA) on weight loss and phytochemical compounds of kiwifruit (Actinidia deliciosa cv. ‘Hayward’) throughout the cold storage and shelf life. Kiwifruits were stored at 0 ± 0.5°C and 90 ± 5% RH for 180 days, and at 20 ± 1.0°C and 80 ± 5% RH for 5 days in shelf life conditions. During cold storage, weight loss was significantly lower (P < 0.05) in 0.25 and 1.0 mM MeJA treatments than those of control and 0.5 mM MeJA treatments. The highest flesh firmness was determined in MeJA-treated fruits.

  • The antioxidant and antibacterial properties of the nutmeg oil (NMO) were assessed in the present study, and its optimum inclusion level in chicken meat patties as a natural preservative was ascertained. NMO was added to the chicken patties at 0.01%, 0.05% and 0.10% levels. Chicken patties without any addition served as control. Emulsion pH, product pH, emulsion stability, product yield and water activity did not differ significantly among the treatments. DPPH scavenging activity of NMO was significantly highest in 0.10% and lowest in 0.01% treatments.

  • Sugarcane juice was analysed for the two different treatments such as ohmic heating and conventional heating. The study analysis showed that the total plate count decreased with severity of ohmic heating treatment which reduced from 6.3 to 3.47 log cfu/ml for 90 C and 15 min treatment. So observing the PPO inactivation, colour change and microbial reduction of the treated samples into consideration, ohmic heating of sugarcane juice at 70C for 3 min holding time was found to be optimum.
