In the world, almost all chicken meat is used in chilled or frozen meat to ensure quality and food hygiene and safety, but in Vietnam, the habit of using hot chicken meat is still quite common (do not lower the carcass temperature after slaughter, in storing, transporting or consuming), leading to a very high risk of food poisoning from this raw material.

The influence of two factors - "broomrape" and "soil type" on quantities of seven trophic groups of soil microorganisms (Autochthonous; Oligotrophic; Actinomycetes; Microscopic fungi; Ammonifying; Assimilating mineral nitrogen; Aerobic nitrogen-fixing bacteria of the genus Azotobacter) were determined. Soil samples for microbiological analysis were taken from the rhizosphere zone of plants in sunflower crops from two soil types (Haplic Vertisols and Chromic Cambisols), in phenological phases of sunflower and of broomrape - "flowering".

The results showed that microbial quantities continuously changed during cocoa fermentation and the highest quantity of dominant microorganisms at different stages of fermentation process as 8.03 log cfu/g of yeast, 6.34 log cfu/g of mold, 7.77 log cfu/g of lactic acid bacteria, 7.87 log cfu/g of acetic acid bacteria, 7.25 log cfu/g of Bacillus, and 10.93 log cfu/g of the total aerobic bacteria.

Vaginitis in women can be caused by aerobic bacteria, Trichomonas vaginalis, yeast or it can be bacterial vaginosis which can lead to various gynaecological and obstetrical complications. This is a retrospective study aimed at determining the prevalence of vaginitis due to various microorganisms. A total of 500 women in the reproductive age group attending the tertiary care hospital over the last 2 years were included in the study. The vaginal swabs of these patients were subjected to Gram‟s staining & wet mount to identify T.vaginalis, budding yeast and clue cells.

The aim of this study is to select ferments from microorganisms isolated in palm wine to varieties of palm oil (Dura and Pisifera). The load of mesophilic aerobic germs and yeasts remains high during tapping of palm wine. The load of Lactic acid bacteria increased in Pisifera variety to log 1.4± 0.1 CFU/ml for the first day at log 2.9 ± 0.1 CFU/ml after two weeks and then decrease after the last week at log 0.6 ± 0.1 CFU/ml. In the Dura palm wine, this load increased from log 0.9 ± 0.1 CFU/ml to log 2.2 ± 0.2 CFU/ml after two weeks.

Microorganisms from dusts of organic origin was identified from some saw mill, (Site 1) and a poultry farm (Site 1) in Port Harcourt. The exposure to these organic dusts by people employed in these establishments over a long period of time can lead to occupational health diseases especially in immune compromised persons. Nutrient Agar, Sabaroud Dextrose Agar (SDA), and Mac Conkey Agar (MA) in sedimentation method were used to isolate microorganisms.

Fen liquor is typical of Chinese light-flavor liquor, which is fermented from sorghum with Fen-Daqu powder. Fen-Daqu is a saccharifying agent and fermentation starter obtained by natural solid-state fermentation under non-sterile conditions. The standard plate count and the online measurement methods were used to enumerate the surviving microorganisms, and measure the physiochemical in Fen-Daqu during the incubation.

Changes in melanosis, microbiology, and fat oxidation in Pacific white shrimps (Litopenaeus vannamei) when treated with Houttuynia cordata extract (designated E-DC) were monitored during cold storage for seven days at 20 C. Whole shrimps treated with E-DC solution (0.025%, w/v) revealed slow growth of total aerobic microorganisms, Enterobacteriaceae and Pseudomonas aeruginosa, throughout cold storage in comparison to the control sample treated by water (p0.05).

The results showed that while the shelf life of sea grapes preserved in PVC was only 2 days, that in PA, PP were up to 10 days. Moreover, the weight loss, the rate of damage and total aerobic microorganisms of grape seaweeds preserved in PA were lower than that in PP. This means that suitable packaging will help to maintain the quality and extend the shelf life of fresh sea grapes.
