The objectives of this study were to investigate the potential biological activities of black cumin seed oil (BCSO) and wheat germ oil (WGO) on different cell lines. Initially, commercially available BCSO and WGO obtained by supercritical carbon dioxide extraction were analyzed in terms of tocopherol, aliphatic alcohols, and thymoquinone content via HPLC and GC analysis. Cell free antioxidant activities and total phenolic content of both oils were detected by DPPH assay and Folin–Ciocalteu method, respectively.

The strain Saccharomyces cerevisiae Bordeaux synthesized the most total aldehydes at a temperature of 24оС, while Saccharomyces cerevisiae 8-11 - at 28оС. Acetaldehyde, acetone and 2-butanone were identified in the experimental wines by gas chromatographic analysis. During the fermentation at a temperature of 20°C and 24°C, Saccharomyces cerevisiae Bordeaux produced more acetaldehyde, acetone and 2-butanone compared to 8-11. At 28°C Saccharomyces cerevisiae 8-11 produced more acetaldehyde and 2-butanone, 33.

The experimental data were compared with the theoretical results obtained by the quantum chemical calculations of the DFT/B3LYP method with LANL2DZ basis set. A laboratory experiment was conducted at Microbiology Lab (AICRP-WC), University of Agricultural Sciences, Dharwad during 2012-13 in order to prepare sugarbeet wine from different varieties of Tropical Sugarbeet (TSB). Four TSB varieties were selected viz. Magnolia, PAC 60008, Calixta and SZ 35 for wine preparation. In the first four treatments, the sugarbeet juice was obtained and directly assembled for fermentation without any TSS adjustment (T1 to T4). The obtained juice TSS was adjusted to 23 0 brix in the next four set of treatments (T5 to T8).

Nduiyi is a traditional amylolytic starter used to produce sweet-sour alcoholic beverage, called Nduijao by Jeme Naga in Dima Hasao (formerly, North Cachar Hills) district of Assam. The aim of this study was to examine the Yeast flora present in Nduiyi collected from Dima Hasao district of Assam. Total 4 samples of Nduiyi was collected from Jeme Naga villages of the Hill district. Oxalates in edible mushrooms are the new concept for mitigating the kidney stones in humans. In the present study, a total of nine edible mushroom species were collected, out of which six were procured from the local vendors, growers and three from wild areas of West Bengal. The sporocarps of the collected mushroom were sterilized with alcohol and cleaned to detect oxalate contents in edible mushroom species. The total oxalate content of the raw, commercially grown mushrooms ranged from 44.1 to 92.

Ginger ale is a type of beer brewed from malted barley using a warm fermentation with a strain of brewer’s yeast. Ginger ale commonly contains water, sugar, ginger extract, lime and other spices. A study on „Comparative Performance of yeasts for Quality Wine Production‟ was carried out at Vasantrao Naik College of Agricultural Biotechnology, Yavatmal during the year 2019-20. Two different yeast strains PI-1 and PI-2 were isolated from rotten pineapple (Ananus comosus ) juice using YEPD medium. The isolated strains tested and confirmed to yeast Saccharomyces cerevisiae. These two identified strains PI-1 and PI-2 were studied for capability of fermentation activity for quality wine production and found PI-1 found to be of good capability for wine production.

This in-vitro study evaluates the antibacterial &antifungal action of aqueous & alcoholic extracts of new herbal vaginal formulation containing equal amounts of Symplocos racemosa Roxb. and Ficus glomerata Roxb. stem barks against gram positive and gram negative bacteria and candid fungus by using the methods of zone of inhibition and minimum inhibition concentration (MIC) to assess its efficacy in treating vaginitis. During phytochemical analysis, alkaloids, flavonoids, tannins and carbohydrates were found to be present in both extracts.
