Aroma and flavor are the most important food quality criteria, in fact it is generally accepted that the volatile profile reflects the image of the smelting and aroma of cheeses.

This study aimed at discriminating the Turkish Taşköprü garlic, possessing protected geographical indication (GI) in Turkey and GI registration from the European Union, from the other samples. For this reason, the combination of headspacegas chromatography-mass spectrometry (HS-GC-MS) analysis of the volatile organosulfur compounds (VOSCs) and two multivariate analysis techniques, namely hierarchical cluster analysis (HCA) and principal component analysis (PCA), were employed for classifying the garlic samples on the basis of their geographical origin.

The fruits of Arbutus unedo L., a shrub that grows spontaneously in countries around the Mediterranean basin, are traditionally harvested and used for the production of a distilled spirit. The main objective of this work is to compare the chemical profile of distillates obtained from fermented A. unedo fruits. This study was designed to reveal the chemical diversity of some Thymus sipyleus subspecies growing wild in Turkey and to compare the volatile compound profiles by using micro(hydro)distillation technique. For this purpose, volatile compounds isolated by microdistillation from nine samples (three plant samples collected from different regions in Antalya) of Thymus sipyleus Boiss. subsp. sipyleus var. sipyleus, T. sipyleus Boiss. subsp. sipyleus var. davisianus Ronniger, and T. sipyleus Boiss. subsp. rosulans (Borbas) Jalas were analyzed by GC and GC-MS systems.

In this work, it was possible to observe the different profiles for the Pilsen, Witbier and IPA style beers, when quantifying the analytes methanol, ethanol, n-propanol, iso-butanol, 3-methyl1-butanol (iso-amyl alcohol), acetaldehyde, ethyl acetate and iso-amyl acetate. Pilsen beer, with low fermentation, presented the ethanol content in the same concentration range as Witbier beer, as expected, but with higher alcohols and lower esters than the other two.

The aim of the study was to investigate the effect of pH on the lipid oxidation of red onion skin extracts (ROSEs) treated with washed tilapia muscle model systems (WTMS). Minced and buffered washed samples were prepared at pH 6.3 and 6.8. The WTMS were treated with2 different concentrations of red onion skin prior to storage for 5 days. Lipid oxidation was investigated via peroxide values (PVs), thiobarbituric acid reactive substances (TBARS), and the formation of volatile compounds. Fatty acid profiles of the samples were also identified.

Very few studies are interested to the volatile compounds of pomegranate and evoking their potentials, especially, their antibacterial activity. In the present study, edible (arils) and non-edible (peels) parts of five pomegranate varieties (Tounsi, Kalai, Zahri, Chelfi and Garci) were compared for their phenolic contents, antioxidant activity, aroma profile and antibacterial propriety of their volatile compounds. Results showed that peel of the five varieties contained higher content in phenolics, flavonoids, tannins, anthocyanins and carotenoids additionally to higher antioxidant power.

This study investigates (i) the impact of first- and second-moment exchange rate exposure on individual firm value and the stock return volatility underlying exchange rate fluctuation, (ii) the time-varying exchange rate exposure following the 1997 Asian financial turmoil and the global financial crisis which started in 2007. We find a high percentage of exposed firms before the two crises but if this percentage decreases dramatically after, the exposure level is much larger. The two crises affect also the asymmetric profile of the firms and volatilities.

This paper investigates high frequency time-series features of stock returns and volatility on China's stock markets. The empirically observed probability distributions of log-returns are almost symmetric, highly leptokurtic, and characterized by a non-Gaussian profile for small index changes. Thus, the China's stock markets cannot be described by a random walk. We suggest that the correlation dynamics and stochastic changes of stock prices of China's stock markets are investigated by the Lorentz stable distribution.
