A polyelectrolyte complex (PEC) matrix formed between chitosan and pectin was developed to entrap a bioactive compound (anthocyanin), obtaining an useful pH indicator device. Polysaccharides of opposite charges such as chitosan and pectin can have a very strong intermolecular interaction.

Impact of hydrothermal and mechanical processing on dissolution kinetics and rheology of oat -glucan
Oat mixed-linkage -glucan has been shown to lower fasting blood cholesterol concentrations due notably to an increase in digesta viscosity in the proximal gut. To exert its action, the polysaccharide has to be released from the food matrix and hydrated.

We produced and characterized copper(II)-chitosan complexes fabricated via in-situ precipitation as antibioticfree antibacterial biomaterials. Copper was bound to chitosan from a dilute acetic acid solution of chitosan and copper(II) chloride exploiting the ability of the polysaccharide to chelate metal ions.

Brewing is a highly complex stepwise process that starts with a mashing step during which starch is gelatinized and converted into oligo and/or monosaccharides by enzymes and heat. Previous studies have mostly been restricted to analysing the grain and/or malt prior to entering the brewing process, but here we track the fates of polysaccharides during the entire brewing process.

The primary plant cell wall is composed of a complex network of pectin, hemicellulose and cellulose. Potential interactions between these polysaccharides were studied for carrot, tomato and strawberry, with a focus on the role of pectin.

The effects of pH, ionic strength and polymer ratio in the complexation of chitosan (CHI) with different anionic polysaccharides, namely gum Arabic (GA), sodium alginate (ALG) and κ-carrageenan (CRG), were investigated. This was made using titration techniques, which allowed the determination of stoichiometry and binding constant of complexes.

A protein-polysaccharide-based potential nanocarrier system have been developed via a simple, one-step preparation protocol without the use of long-term heating and the utilization of hardly removable crosslinking agents, surfactants, and toxic organic solvents.

The aim of research was to develop biopolymer films based on natural polysaccharides. For the first time, biodegradable films were obtained on the basis of a furcellaran-chitosan polyelectrolyte complex. The conditions for its formation were determined by measuring the zeta potential as a function of colloid pH, the size of pure components and their mixtures.

A simple relation between pendant groups of polymers in hydrogels is introduced to determine the crosslink density of (complex) hydrogel systems (mixtures of 2,2,6,6-tetramethylpiperidine-1-oxyl (TEMPO) modified nanocellulose, alginate, scleroglucan and Laponite in addition of crosslinking agents).

Staphylococcus argenteus and S. schweitzeri, were recently proposed as novel species within S. aureus complex (SAC). S. argenteus has been reported in many countries and can threaten human health. S. schweitzeri has not been associated with human infections, but has been isolated from non-human primates. Questions regarding the evolution of pathogenicity of these two species will remain elusive until an exploratory evolutionary framework is established.

Pectin is a heterogeneous complex polysaccharide found in the primary cell wall of most cells. In this work, lowmethoxyl pectin was extracted from pumpkin (Cucurbita moschata). The obtained pectin was characterized by GPC FTIR and NMR spectra. The obtain results showed that structural feature of the pectin is a main chain of poly-α(1→4)- D-galacturonic acid and occasionally interrupted by α(1→2)-linked α-L-rhamnopyranose residues and branches Galp is linked to GalpA at C-2 position.

Pectins are a group of structurally complex plant cell wall polysaccharides whose biosynthesis and function remain poorly understood. The pectic polysaccharide rhamnogalacturonan-I (RG-I) has two types of arabinogalactan side chains, type-I and type-II arabinogalactans. To date few enzymes involved in the biosynthesis of pectin have been described.

Plant cell walls are mainly composed of polysaccharides such as cellulose and callose. Callose exists at a very low level in the cell wall; however, it plays critical roles at different stages of plant development as well as in defence against unfavorable conditions.

Edible coatings or films have received considerable attention in recent years. Materials used in edible packaging (polysaccharide, lipid and protein-based and their composites) have apparent advantages over synthetic films. It could contribute to the reduction of environmental pollution. The main advantage of edible films over synthetics is that these may be safely eaten as a part of the food products and are environment-friendly at the same time as they increase the shelf life of fresh products.

When the rhizosphere is nitrogen-starved, legumes and rhizobia (soil bacteria)enter intoa symbiosis that enables the fixation of atmospheric dinitrogen. This implies a complex chemical dialogue between partners and drastic changes on both plant roots and bacteria. Several recent works pointed out the importance of rhizobial surface polysaccharides in the establishing of the highly specific symbiosis between symbionts. Exopolysaccharides appear tobe essential for the early infection process.
