This strain showed high activity in fresh goat cheese (11–15 mm inhibition zone) having the ability to prevent the development of S. aureus, also reducing the inoculum level of pathogen by about 1 log cycle. These results revealed that this strain could be a promising biopreservative starter for the dairy industry. To the author ’s knowledge, this is the first report of L. plantarum being isolated in salted dried camel meat.

India is the world's largest milk producer and primarily an agricultural society where animal husbandry is the backbone of the national economy. In Rajasthan, dairying provides millions of marginal farmers and landless labourers for their livelihood so it is a major economic activity of rural people. The state faces constant drought and famine, which often leads to crop failure because most of the agriculture is fed with rain. In this climate scenario, the dairy sector provides permanent annual income to a large number of farmers.

Lactic acid bacteria were isolated from the curd and pickle samples. The morphological and biochemical characteristics and sugar fermentation pattern were employed to identify lactic acid bacteria. The isolates from both curd and pickle were identified as rods/bacilli. Both the isolates were Gram positive, nonmotile, catalase negative and exhibited negative pattern of citrate utilization, H2S formation, indole production, oxidase test, urease activity, NH3 production from arginine and VP reaction.
