Lactoferrin (LF) is a Fe 3+ -binding glycoprotein, first recognized in milk and then in other human epithelial secretions and barrier fluids. Many different functions have been attributed to LF, including protection from iron-induced lipid peroxidation, immunomodulation and cell growthregulation, DNA binding, and transcriptional acti-vation. Its physiological role is still unclear, but it has been suggested to be responsible for primary defense against microbial and viral infection.

Thioredoxins are a group of small redox-active proteins involved in cellular redox regulatory processes as well as antioxidant defense. Thioredoxin, glutaredoxin, and try-paredoxin are members of the thioredoxin superfamily and share structural and functional characteristics. In the mal-arial parasite, Plasmodium falciparum, a functional thio-redoxin and glutathione system have been demonstrated and are considered to be attractive targets for antimalarial drug development.

The defensive function of the glucosinolate–myrosinase system in plants of the order Capparales results from the formation of isothiocyanates when glucosinolates are hydrolysed by myrosinases upon tissue damage. In some glucosinolate-containing plant species, as well as in the insect herbivore Pieris rapae, protein factors alter the outcome of myrosinase-catalysed glu-cosinolate hydrolysis, leading to the formation of products other than isothiocyanates.
