This study was designed to determine the influence of extracted oil of Cuminum Cyminum on the chemical properties of reused Sudanese edible oil (sunflower oil). Green cumin oil was extracted from its mature seeds by water-steam distillation process. The chemical profile of cumin oil was detected by using GC-MS.

The essential oil, obtained from the aerial parts of the plant, exhibited high AChE inhibitory activity, consisting of mainly 1,8-cineol (58.89%). The antioxidant activity according to 6 complementary tests and anticholinesterase potential of the methanol extracts and triterpenoids α-amyryltetracosanoate, oleanolic acid, ursolic acid, and sitosterol acetate were also investigated, and methanol extract exhibited the highest antioxidant and anticholinesterase activity, surpassing the other tested extracts and pure compounds.

Microalgae are organisms effective of accumulating high quantity of industrially important lipids with promising characteristics as an excellent feedstock for biodiesel production. Regarding the content of total polyphenols, the maximum average value obtained was 477 g Eq g-1 for rice from both countries and the best results for antioxidant activity, using the Photoquem® method with methanolic extract, was 3.43 µM Eq Trolox g-1 for the Italian rice samples. These results indicate that the technological processes influence the nutritional and functional quality of rice grain from these countries.

The aim of the study was to investigate the effect of pH on the lipid oxidation of red onion skin extracts (ROSEs) treated with washed tilapia muscle model systems (WTMS). Minced and buffered washed samples were prepared at pH 6.3 and 6.8. The WTMS were treated with2 different concentrations of red onion skin prior to storage for 5 days. Lipid oxidation was investigated via peroxide values (PVs), thiobarbituric acid reactive substances (TBARS), and the formation of volatile compounds. Fatty acid profiles of the samples were also identified.

The results showed that fabp10a gene was not strongly expressed in all 3 types of tissues; fabp3 gene was most strongly expressed in liver tissue and fabp7 was highly up-regulated in brain tissue.
