  • In this study, sweetened black and green tea were utilized as substrate for kombucha fermentation. Linden, lemon balm, sage, echinacea, mint, and cinnamon infusions were added to kombucha to design a novel beverage with improved functional and organoleptic characteristics. After fermentation, the antioxidant capacity (AC) of the kombucha increased by 13.96% 2,2-diphenyl-1- picryl-hydrazyl-hydrate (DPPH), 48.90% ferric reducing antioxidant power (FRAP), and 55.54% cupric reducing AC (CUPRAC).

  • Three Trichoderma isolates (THDU-1, THDU-2, and THDU-3) were isolated from the root zone area of healthy bananas on the farm in Ba Thuoc district, Thanh Hoa province. All of these isolates showed high inhibitory activity against soil borne diseases Rhizoctonia solani and Sclerotium rolfsii. The present study was undertaken to select cheap and efficient agricultural residue suitable for cellulase production using fungus Humicola insolens.   • Amylase producing thermophilic bacterial strain was isolated from Jeori hot water spring, Rampur Bushahr of Shimla district of Himachal Pradesh, India and identified as Bacillus thuringiensis J2 using 16S rRNA gene sequencing and deposited in NCBI gene bank vide accession number |KY990713|. Medium components and process parameters were optimized with respect to substrate concentration, carbon sources, nitrogen sources, incubation period, pH and temperature for an enhanced amylase production.

  • The present results reported that leaves and twigs of AN contained higher levels of CP, FAT, and NFE than in AH treatments. They had significant (P< 0.05) effects on dry matter intake (DMI), lambs' body weight, and digestibility. In contrast, Degradability, higher gas production and in vitro fermentation range of BH to that these substrates had a higher nutritional value than the other browse species. Lambs receiving BH consumed (P< 0.05)more feed compared to those received AH or AN.

  • Endoglucanase is one of the most important industrial enzymes. In the present study, three different fungi Aspergillus sp., Trichoderma sp. and Penicillium sp. were isolation for endoglucanase production from soil samples on PDA plate. All three fungus processed by submerged fermentation and solid state fermentation for its enzymatic activity. Aspergillus sp., showed highest enzymatic activity in both type of fermentation.

  • Twenty Five lignolytic fungi were isolated from decaying wood samples and were screened for the laccase production using guaiacol and ABTS as indicator compounds. The positive isolates were confirmed for the presence of laccase using Azure B and quantitative enzyme assay in presence of catalase using ABTS as substrate. Further laccase producing capacity of fungus was estimated in seven different media where Czapex Dox medium showed highest enzymatic activity of 17.2 U/ml.

Standardization of protocol was carried out based on pH, titrable acidity and sensory characteristics for the parameters - seed processing technique, substrate, sugar, inoculum, honey concentrations, incubation temperature and fermentation duration using Lactobacillus acidophilus and Saccharomyces ellipsoideus.
