Fried snacks are popular among young Indian population. An experiment was conducted for nutritional quality evaluation of the fried cowpea snacks. Boondi, sev, enrobed nuts and fried nuts were formulated by using cowpea. These products were evaluated for proximate composition, mineral content i.e. iron, calcium and free radical scavenging activity.

Potato is probably the most popular food item in the Indian diet and India is one of the largest producers of potato. Potato is a very rich source of starch. It also contains phosphorus, calcium, iron and some Vitamins C and A. It is vastly consumed as a vegetable and is also used in various forms such as starch, flour, alcohol and dextrin. Besides being used as a daily food item in various vegetable preparations, potato today increasingly finds use in the form of chips or wafers as snacks food.

Traditional Indian snacks namely Matthi and Seviya using partially defatted peanut cake flour at 10 per cent level and powdered fenugreek leaves powder at 1 per cent level were developed with an aim to eradicate malnutrition. The freshly prepared products were analysed for their nutritional parameters.
