In this study, we used the reliable GC-FID/MS technique to analyze the methyl ester derivatives of 37 different kinds of fatty acids. The results showed that high saturated fat concentration in all samples was mostly palmitic acid, whereas the low unsaturated fatty acid content in the cis form was primarily oleic acid and linoleic acid. The amount of monounsaturated and polyunsaturated fats is quite low.

Diet may impact important risk factors for endometrial cancer such as obesity and inflammation. However, evidence on the role of specific dietary factors is limited. We investigated associations between dietary fatty acids and endometrial cancer risk in the European Prospective Investigation into Cancer and Nutrition (EPIC).

Peanut is one of the major source for human consumption worldwide and its seed contain approximately 50% oil. Improvement of oil content and quality traits (high oleic and low linoleic acid) in peanut could be accelerated by exploiting linked markers through molecular breeding.

Fatty acid desaturase 1 (FADS1) and 2 (FADS2) genes code respectively for the enzymes delta-5 and delta-6 desaturases which are rate limiting enzymes in the synthesis of polyunsaturated omega-3 and omega-6 fatty acids (FAs). Omega-3 and-6 FAs as well as conjugated linoleic acid (CLA) are present in bovine milk and have demonstrated positive health effects in humans.

Quinoa (Chenopodium quinoa Willd.) is a pseudo cereal crop, which is considered a new alternative crop due to its high nutritional value and tolerance to environmental stresses. Its seeds are rich in proteins and amino acids (e.g., lysine, threonine, and methionine) that are deficient in other pseudo-cereal crops. It also contains essential fatty acids, such as linoleic, and alpha-linolenic acids, and high quantities of vitamins, e.g., riboflavin (B2), and tocopherol (vitamin E), and inorganic nutrients.

Anticholinesterase furocoumarins from Heracleum platytaenium, a species endemic to the Ida Mountains
The petroleum ether extract of Heracleum platytaenium afforded 8 furocoumarins (psoralen, bergapten, xanthotoxin, pimpinellin, isopimpinellin, sphondin, byakangelicin, and heraclenol) and the methanol extract of H. platytaenium gave only 1 glycosylated dihydrofurocoumarin, apterin. In addition, stigmasterol was also obtained from petroleum ether extract. Structure identification of the isolated compounds has been achieved by using spectroscopic methods, namely 1D and 2D NMR experiments and mass spectral analyses.

This study was the first fatty acid analysis and biological activity report on an endemic Achillea species, Achillea cappadocica Hausskn. et Bornm. The major compounds in the fatty acid were identified as oleic (34.7%), palmitic (23.1%), and linoleic acids (20.6%). The methanol and water extracts indicated higher ABTS cation radical scavenging activity than that of α-tocopherol and BHT at 100 µg/mL. The acetone extract showed 70.62% inhibitory activity against butyrylcholinesterase at 200 µg/mL. The acetone and methanol extracts exhibited moderate antimicrobial activity.

The most optimal results in terms of nutritional value of fish meat were found in open water carp, in the spring, due to high PUFA content, especially linoleic (n-6), as well as EPA and DHA (n-3) fatty acids. This is the result of diet, because carp consumes phyto and zooplankton from the lake's benthos, which are especially rich in essential fatty acids.

The nutritional value of soybean oil is largely influenced by the proportions of unsaturated fatty acids (FAs), including oleic acid (OA, 18:1), linoleic acid (LLA, 18:2), and linolenic acid (LNA, 18:3). Genome-wide association (GWAS) studies along with gene expression studies in soybean [Glycine max (L.) Merr.] were leveraged to dissect the genetics of unsaturated FAs.

Tobacco seed oil could be used as an appropriate feedstock for biodiesel production. However, the high linoleic acid content of tobacco seed oil makes it susceptible to oxidation. Altering the fatty acid profile by increasing the content of oleic acid could improve the properties of biodiesel produced from tobacco seed oil.

Soybean oil is a complex mixture of five fatty acids (palmitic, stearic, oleic, linoleic, and linolenic). Soybean oil with a high oleic acid content is desirable because this monounsaturated fatty acid improves the oxidative stability of the oil.

According to the research result, it can be seen that the seed oil of yam-bean (Pachyrhizus erosus (L.) Urb.) contains all basic substance layers of lipid: polar lipid (PL), sterol (ST), triacylglycerol (TG), and free fatty acid (FFA). Among them, triacylglycerol occupied the highest content (about 65.09 %) whereas the figures for polar lipid and free fatty acid were also relatively high. In the studied seed samples, the highest content of linoleic acid achieved around 32.37 %. There are no published results up to date about the content of fatty acid, tocopherol (with γ-T of 59.

In this study, linoleic acid is obtained by hydrolysis of soybean oil in ethanol/KOH, separation and enrichment using the urea-fatty acid complex formation method for the fractionation of fatty acids. The process involves the formation at 60 ◦C of a homogeneous solution of free fatty acid and urea in 95% ethanol, followed by cooling the resultant urea complex slurry to -5 ◦C and separation by filtration.
