Maillard reaction products of chitosan

The Maillard reaction products (MRPs) were synthesized during the gamma irradiation of mixtures of chitosan (CT) and/or oligochitosan (OC) with glucosamine (GA) at the dose of 25 kGy and investigated their some characteristics. The formations of MRPs were determined by UV-vis spectromectric analyses at the wavelength of 284 nm and 420 nm.

The present study was carried out to investigate the formation of MPRs of chitosan and glucosamine by irradiation treatment. Radiation effect on efficiency of condensation reaction as well as antioxidant and antibacterial activities of resulting MPRs were also studied.

The mixture solutions of glucosamine and chitosan with different molecular weights (123.5; 40.7 and 6.1 kDa) were irradiated by Co-60 gamma ray at dose of 50 kGy to prepare chitosanglucosamine Maillard reaction products (MRPs). The formation of MRPs was determined by measuring UV absorbance (at 284) nm and browning (at 420 nm).
