These non-wood forest products are important for the livelihood of numerous rural communities. This study was undertaken to establish the identity of the edible Russula mushroom being collected for food in Cao Bang, Bac Giang and Quang Ninh provinces.

Commercially produced herbal green teas consumed in Ghana are mostly those imported into the country. However, there are many plants such as “Srenunum” (Lippia multiflora) and lemongrass (Cymbopogon citratus), that are used by Ghanaians to brew herbal tea. The objectives of this study were to develop a tea product from the aforementioned herbs and “reishi” (Ganoderma lucidum), a medicinal mushroom.

The commercialization of mushrooms is critical because they have a short shelf life. For this reason, we investigated the effect of agar-agar and egg white protein on weight loss, polyphenol oxidase and catalase, protein content, total phenolics, total antioxidant capacity, respiration rate, ethylene production and storability of button mushrooms. Our findings suggested that the treatment of edible coating delayed remarkably senescence and maintained the quality of button mushroom.

In this study we extracted bioactive ingredients from fruiting bodies of Laetiporus sulphureus with different solvents and tested the antimicrobial and antitumor activities. The predominant lipid composition of the fruiting bodies was studied with GC–MS and revealed a high amount of oleic acid, octadecenoic acid and ergosterol derivatives.

For the first time a molecularly imprinted polymer (MIP)-based sensor for tyrosinase is described. This sensor is based on the electropolymerization of scopoletin or o-phenylenediamine in the presence of tyrosinase from mushrooms, which has a high homology to the human enzyme. The template was removed either by treatment with proteinase K or by alkaline treatment. The measuring signal was generated either by measuring the formation of a product by the target enzyme or by evaluation of the permeability of the redox marker ferricyanide.

Button mushrooms are highly perishable in nature because of its high moisture content about (85-90%) hence starts deteriorating immediately within a day after harvest. So as to increase its shelf life three different samples of Button Mushroom Slices viz. untreated, blanched and optimized osmosed samples were taken for drying experiment at each level of drying air temperature (50, 60 and 70oC). Drying of osmosed Button Mushroom slices at 70oC drying air temperature provided shortest drying time to produce best quality dried product as compared to blanched and untreated Button Mushroom samples.

Four species of oyster mushroom including P. djamor, P. eous, P. florida and P. citrinopileatus were tested for their yield performance, of them, the most promising yield was obtained in P. eous and P. djamor with minimum spawn running period. On subjecting them with additional substrates, sorghum grain was superior over other spawn substrates for quality spawn production in terms of earliness in growth of spawn and total yield followed by wheat grain.

In the present study, a total 124 participants were judged for their knowledge gain after training on Mushroom Production Technologies. The training programme on Mushroom Production technologies were arranged for rural youth, farmers and farm women of district Barnala, Punjab. Maximum knowledge gain (86.29 %) was observed in Button mushroom compost production technologies followed by 81.45 per cent knowledge gain in learning about the commercial varieties of mushrooms popular in northern India.
