The present study entitled “Utilization of Potato Peels Powder and Sweet Potato Peels Powder for the Preparation of the Value-Added Food Products” was carried out with the Objective to determine the Nutritional Composition of mix Powder. The dehydration of Potato peel and Sweet potato peel was done through tray drying at 60-650C for 10 hours.

Potato is probably the most popular food item in the Indian diet and India is one of the largest producers of potato. Potato is a very rich source of starch. It also contains phosphorus, calcium, iron and some Vitamins C and A. It is vastly consumed as a vegetable and is also used in various forms such as starch, flour, alcohol and dextrin. Besides being used as a daily food item in various vegetable preparations, potato today increasingly finds use in the form of chips or wafers as snacks food.

A ready-to-eat (RTE) micronutrient rich puffed snack food (S3) prepared from composite sample of potato mash with five different green leafy vegetable powder and sprouted soya flour. Prepared snack food (S3) was evaluated along with similar commercial food sample (coded as S1, S2, and S4) for their liking by trained panel members using standard fuzzy logic sensory technique. The developed samples were tested for their quality attributes as colour, flavour, texture and overall acceptability.

The Present study was carried out at Bharatpur district of Eastern Rajasthan during 2015- 16, 2016-17 and 2017-18. Potato is one of the most important vegetable crops of the country. The development of the Agriculture is primarily depends on the application of the scientific technologies by making the best use of available resources. One of the major constraints of traditional potato farming is low productivity due to non management of weeds. To increase the production, productivity and quality of agricultural produce, on farm testing are being conducted at various farmers’ field.

The objective in this study is to investigate optimal culture conditions for mycelial growth and fruiting body formation of the Ling Zhi mushroom, Ganoderma lucidum strain GA3. The results of the study show that the optimal media and temperature for the mycelial growth are potato, glucose, and agar (PGA) supplemented with rice bran, and 25-300 C, respectively. Strain GA3 is able to grow in a wide pH range, between 4 and 12. The most favourable substrate mixture for the formation and development of the fruiting body is 87% sawdust + 4% corn powder + 8% rice bran + 1% calcium carbonate (CaCO3 ).
