In this article, the effect of some factors on hydrolysis of sweet potato starch by Spezyme Alpha to form oligosaccharide with degree of polymerization (DP) from 2 to 6 before being branched was studied.

The rate and extent of digestibility of starch were analysed using the logarithm ofthe slope (LOS) method. Digestibility curves with -amylase were obtained for starches in their native, gelatinised and 24 h retrograded form.

Colibactin is a genotoxin that induces DNA double-strand breaks that may lead to carcinogenesis and is produced by Escherichia coli strains harboring the pks island. Human and animal studies have shown that colibactin-producing gut bacteria promote carcinogenesis and enhance the progression of colorectal cancer through cellular senescence and chromosomal abnormalities.

In the study, α-galactosidase released by Lactic acid bacteria catalyse hydrolysis of galactose containing oligosaccharide. Similarly, β-glucosidase of lactic acid bacteria are making a significant contribution to the dietary and sensory attributes of fermented foods as by deglucosylation, they can release flavour compounds from glucosylated precursors and could increases the bioavailability of health-promoting secondary metabolites. Therefore, the aim of this study was to select strains of lactic acid bacteria isolated from ethnic fermented foods of West Garo Hills of Meghalaya state.

Antifreeze proteins (AFPs) are produced by several cold-water fish species. They depress physiological freezing temperatures by inhibiting growth of ice crystals and, in so doing, permit the survival of these fish in seawater cooler than their normal freezing temperatures. The type II AFP from rainbow smelt (Osmerus mordax), which is a member of the C-type lectin superfamily, was characterized in terms of its Ca2+-binding quaternary structure and the role of its single N-linked oligosaccharide....

Monolayer primary cultures of thyroid cells produce, in the presence of insulin, a cytosolic inhibitor of thyroid peroxi-dase (TPO), lacto peroxidase (LPO), horseradishperoxidase (HRPO) and glutathione peroxidase (GPX). The inhibitor, localized in the cytosol, is thermostable and hydrophylic. Itsmolecularmass is less than2 kDa.The inhibitoryactivity, resistant to proteolytic and nucleolytic enzymes, disappears with sodium metaperiodate treatment, as an oxidant of carbohydrates, supporting its oligosaccharide structure....

We present a comparative study of ChiA, ChiB, and ChiC, the three family 18 chitinases produced bySerratia marcescens. All three enzymes eventu-ally converted chitin to N-acetylglucosamine dimers (GlcNAc2) and a minor fraction of monomers. ChiC differed from ChiA and ChiB in that it initially produced longer oligosaccharides from chitin and had lower activ-ity towards an oligomeric substrate, GlcNAc6.

Thea-galactosidase from Aspergillus nidulans(AglC) belongs to a phyloge-netic cluster containing eukaryotica-galactosidases and a-galacto-oligosac-charide synthases of glycoside hydrolase family 36 (GH36). The recombinant AglC, produced in high yield (0.65 gÆL )1 culture) as His-tag fusion in Escherichia coli, catalysed efficient transglycosylation with a-(1fi6) regioselectivity from 40 mm4-nitrophenola-d-galactopyranoside

Sialylated oligosaccharides, present on mammalian outer-cell surfaces, play vital roles in cellular interactions and some bacteria are able to mimic these structures to evade their host’s immune system. It would be of great benefit to the study of infectious and autoimmune diseases and cancers, to under-stand the pathway of sialylation in detail to enable the design and produc-tion of inhibitors and mimetics.
