Ebook "Chemistry and technology of honey production" explains and discusses honey and its production from a chemical perspective. It outlines why honey is a special and unique food, being produced by bees from the nectar of plants or from secretions of living parts of plants. Although glucose and fructose are the main constituents of honey, its overall composition is far from being simple or uniform: other substances such as organic acids, enzymes, or minerals are found in varying amounts.

In this study, we evaluated whether bacteria can utilize the prebiotic present in soybean meal and determine the prebiotic index and activity score of the soybean meal by the newly isolated probiotic, Bacillus velezensis BS. The effect of soybean meal-containing medium on the growth, digestive enzyme secretion, and pathogenic resistance of the B. velezensis BS were also examined.

We investigated the effect of endoplasmic reticulum (ER) protein 29 (ERp29) on thyroglobulin (Tg) secretion and its negative regulation by microRNAs (miRNAs). ERp29 overexpression promoted Tg secretion from thyrocytes of PCCL3 cells via activation of ER stress sensors, including activation of transcription factor 6 fragmentation, XBP1 mRNA splicing by inositol-requiring enzyme 1, and phosphorylation of eukaryotic initiation factor 2 alpha as downstream actions of RNA-dependent protein kinase-like ER kinase.

Leucine decarboxylase (LDC) is a recently proposed enzyme with no official enzyme commission number yet. It is encoded by the Mus musculus gene Gm853 which is expressed at kidneys, generating isopentylamine, an alkylmonoamine that has not been described to be formed by any metazoan enzyme yet. Although the relevance of LDC in mammalian physiology has not been fully determined, isopentylamine is a potential modulator which may have effects on insulin secretion and healthy gut microbiota formation.

The genetic diversity in Australian populations of Xanthomonas species associated with bacterial leaf spot in tomato, capsicum and chilli were compared to worldwide bacterial populations. The aim of this study was to confirm the identities of these Australian Xanthomonas species and classify them in comparison to overseas isolates.

Genomic studies demonstrate that components of virulence mechanisms in filamentous eukaryotic pathogens (FEPs, fungi and oomycetes) of plants are often highly conserved, or found in gene families that include secreted hydrolytic enzymes (e.g., cellulases and proteases) and secondary metabolites (e.g., toxins), central to the pathogenicity process.

Hydrolysis of lignocellulosic substrates is usually performed by enzymes produced and secreted by the fungus Trichoderma reesei. Studies identifying transcription factors involved in the regulation of cellulase production have been conducted but no overview of the whole regulation network is available.

Eucalyptus is the main plantation wood species, mostly grown in aluminized acid soils. To understand the response of Eucalyptus clones to aluminum (Al) toxicity, the Al-tolerant Eucalyptus grandis × E. urophylla clone GL-9 (designated “G9”) and the Al-sensitive E. urophylla clone GL-4 (designated “W4”) were employed to investigate the production and secretion of citrate and malate by roots.

In this chapter, physiological responses of oleaginous fungi such as, biomass production, substrate uptake, secretion of hydrolytic enzymes, and lipid accumulation with cellulose or starch as the organic carbon substrate were studied. Glucose, one of the simplest sugars, was also studied as a comparison study. M. rouxii, a known lipid and GLA producer (Ahmed et al., 2006), was used in this study.

Sedolisins are acid proteases that are related to the basic subtilisins. They have been identified in all three superkingdoms but are not ubiquitous, although fungi that secrete acids as part of their lifestyle can have up to six paralogs.

The aim of this study was to isolate amylase-producing fungi, optimize the cultural conditions using solid state fermentation (SSF) and characterize the partially purified enzyme. Six fungal strains isolated from soil and decayed onion samples were screened for their ability to secrete amylase. Culture medium was optimized using One-factor-at-aTime (OFAT) methodology under SSF.

Small-cell lung cancer (SCLC) is known to express antigens of both the neural crest and epithelium, and to secrete polypeptide hormones and enzymes. Anecdotal reports correlate lung cancer with marked hyperamylasemia, and a review of the literature reveals only one case of metastatic SCLC linked to high paraneoplastic lipase production.

The Tropical Thorn Forest at foot hills of Niligris located in Forest College and Research Institute, Mettupalayam under Jackanari Reserve forest, Tamil Nadu, India was scouted and surveyed for the presence and prevalence of Ectomycorrhizal Fungal association. About Twelve different groups of fruiting bodies of ECM fungi were identified and their prevalence index ranged between 40-80% indicating wide diversity and dependency of forest trees on ECM fungi.

Aspergillus oryzae, a safe filamentous fungus, is widely used in food and enzyme production. In this study, we examined a cultivation model using rice husks as carrier to assess the capacity of recombinant protein production in A. oryzae. The model was first tested with the A. oryzae strain expressing the DsRed reporter gene. The expression of DsRed was easily detected by the pink color of the fungal mycelium on culture media and under a fluorescence microscope. The model was then evaluated with the phyA gene encoding a phytase from the fungus Aspergillus fumigatus.

Some glycosidic enzymes secreted by the gut of Eudrilus eugeniae and the abundance of bacteria producing similar enzymes in the gut were studied in order to know the extent of enzymatic contribution by the worm gut and the ingested bacteria. 120 different bacteria were isolated from the worm gut and their enzymatic activities were detected by using respective media and reagents. In vitro gut wall tissue culture of various gut portions was done to assess enzymatic activities in gut wall and in the culture medium.

The plant cell wall serves as a primary barrier against pathogen invasion. The success of a plant pathogen largely depends on its ability to overcome this barrier. During the infection process, plant parasitic nematodes secrete cell wall degrading enzymes (CWDEs) apart from piercing with their stylet, a sharp and hard mouthpart used for successful infection.
