The effect of chitosan, glucose and chitosan–glucose complex (CGC) on the microbial and postharvest quality of shiitake (Lentinus edodes) mushroom stored at 4 ± 1 C for 16 days was investigated. Mushroom weight loss, respiration rate, firmness, ascorbic acid, total soluble solids, microbial and sensory quality were measured. The results indicate that treatment with CGC coating maintained tissue firmness, inhibited increase of respiration rate, reduced microorganism counts, e.g., pseudomonads, yeasts and moulds, compared to uncoated control mushroom.

Shiitake mushroom contains several therapeutic actions such as antioxidant and antimicrobial properties, carried by the diversity of its components. In the present work, extracts from shiitake mushroom were obtained using different extraction techniques: high-pressure operations and low-pressure methods. The high-pressure technique was applied to obtain shiitake extracts using pure CO2 and CO2 with co-solvent in pressures up to 30 MPa.

Lentinula edodes, known as ‘‘shiitake’’ is one of the widely used medicinal mushrooms in the Orient. Antitumour activity of extracts of this mushroom has been widely demonstrated in animals and humans. However, this activity was shown to be host mediated and not by direct cytotoxic activity to cancer cells. This study demonstrates cytotoxic and cell growth inhibitory (cytostatic) effect of aqueous extracts of the mushroom on MCF-7 human breast adenocarcinoma cell line using an MTT cytotoxicity assay.

Texture, nutritive values and volatile compounds of Lentinula edodes, Pleurotus ostraetus and Pleroutus sajor-caju mushrooms were determined. The volatiles have been found out with an estimation approach by carrying out gas chromatography and mass spectrophotometer (GS–MS) Library Catalogue comparison. Neither regular increase nor decreases were observed for the values of texture, moisture, ash and protein values of L. eddoes.
