The objective of this research study were to study and to evaluate digital supply chain operation model for educational management in nonformal education in rural Thailand. The samples in the research study consisted of ten purposively selected experts consisted of three experts on supply chain management, five experts on Digital Technology and two experts on the course. Data were analysed by arithmetic mean and standard deviation. The research findings model seven elements namely main components, Supplier, Manufacturer , Finished product, Customers Satisfaction and Feedback.

Farinograph values on the contrary, showed the good quality of standard flour but parameter water absorption was better with addition of oat flour due to non-starch polysaccharides presented in oat. Extensograph device showed that increasing addition of oat flour decreased resistance to extension. Colorant cereals generally can increase biodiversity in agriculture, and can be attractive raw materials for production foods with added value.

The present investigation was carried out in the Department of Food Science and Technology, Dr Y S Parmar University of Horticulture and Forestry, Nauni, Solan (HP). Squash was prepared using different proportion of pumpkin pulp (25, 30, 35, 40 and 45 per cent) and total soluble solids (40, 45 and 47ºBrix) to finalise the base recipe. The squash was liked by the panellists but the feedback of judges revealed that the flavour of the product is required to be improved.

Papaya fruit was used for the production of best quality powder by using low cost technology. Various treatments were standardized prior to drying of the shreds of papaya and among these treatment T2 i.e. by steam blanching of shreds for 3 minutes and dipping in 0.2 per cent KMS followed by immediate cooling. The pre-treated shreds were then dried in mechanical dehydrator at 55±2 °C and then converted into powder by grinding in mixer cum grinder.
