Tamarind (Tamarindus indica) has long been known for its high nutrition content and pharmacological potential. However, there is lack of studies on the content of antioxidants, phenolic and flavonoid contents of tamarind seed grown in Vietnam.

We have carried out studying for antioxidant activity of 58 extracts prepared from vegetables and fruits in Viet Nam by three methods including DPPH and H2O2 scavenging activity assays and determination of total flavonoid content (TFC). Ethanol extract of Tamarind seed (NTBT-17), Grape seed (NTBT-19) and Mangosteen peel (TNB-10) showed high amount of TFC which is 848.8, 655.9 and 422.9 mgQE/100g, respectively.

In this study, gum was successfully extracted from tamarind seeds (gum) and used as a material for removal of reactive dye (Reactive Blue 220-RB220). The performance of decolorization and COD reduction of gum was investigated using one-factor-at-a-time method.

An experiment was conducted to study the seed coat to kernel ratio, seed coat tannin and tamarind kernel powder (TKP) outturn in different age-classes viz., age class of 10-20 years, age class of 20-30 years, age class of 30-40 years, age class of 40-50 years and age class of 50-60 years at Paiyur, Kaveripattinam taluk, Krishnagiri district of Tamil Nadu, India.

Tamarind seeds are rich source of polysaccharide which is obtained from tamarind seed kernels. Present study was carried to examine the variation in Tamarind Seed Powder (TSP) yield with respect to different seed sources collected from Tamil Nadu (19), Kerala (3), Karnataka (13) and Andhra Pradesh (5). 100 seed weight were measured and seeds were roasted and Kernel and testa content and gum yield were measured. The maximum 100 seed weight was obtained in Aasan and which also recorded in highest gum yield. The percentage yield was about 50 %.

The study result revealed that 5 minutes of roasting resulted with the moisture loss of 12% yield 95 % creamy white colour kernels with the viscosity of 13.8 cp 12 % (2.54 g of TSP/20 g TKP) and maximum polysaccharide yield . Although the remaining roasting treatments with more time of roasting gave good decortication efficiency, but resulted with brownish kernel colour and low Tamarind Kernel Powder outturn. The remaining treatments recorded low gum outturn and viscosity when compared to 5 minutes roasting.

Genetic variability, heritability, genetic advance and genetic advance as a per cent over mean for twenty characters were assessed by field evaluation (part of survey) of two thirty one tamarind genotypes in six districts (viz, Belagavi, Dharwad, Gadag, Bellary, Chitradurga and Gulbarga) with different location during 2018. High degree of variation was observed for all characters. In all cases, phenotypic variances were higher than the genotypic variance.

Tamarind (Tamarindus indica L.), or Imli is also called Indian Date. It belongs to the family Leguminaceae. Tamarind is traditionally propagated from seed. The aim of this study was to study the conformational changing when sulfated groups were introduced to the molecular chain of native tamarind seed polysaccharide (TSP). Light Scattering (LS) method was used to determine conformation of TSP and its sulfated derivative TSPS. The results indicated that both TSP and TSPS have a highly branched and more sphere-like molecule; however, after sulfation, the TSPS became more branched structure than native polysaccharide.
