This study was carried out to produce new herbal beverages from Foeniculum vulgare and Cymbopogon proximus using for inhibiting or preventing calcium oxalate crystals formation. The preliminary chemical composition and phytochemical tests ofF. vulgare andC. proximushave been examined. Also, total polyphenols and total flavonoids contents were determined.

Oxalates in edible mushrooms are the new concept for mitigating the kidney stones in humans. In the present study, a total of nine edible mushroom species were collected, out of which six were procured from the local vendors, growers and three from wild areas of West Bengal. The sporocarps of the collected mushroom were sterilized with alcohol and cleaned to detect oxalate contents in edible mushroom species. The total oxalate content of the raw, commercially grown mushrooms ranged from 44.1 to 92.

The use of cereal grains as sources of food for man is well known. Different food products are obtained from grains based on the processing technique and the type of cereal employed. Although the causes of malnutrition are many and diverse, inadequate intake of foods and essential nutrients is a major contributory factor and yet this subject is poorly researched in many developing countries including Nigeria.
