  • Porosity, permeability and water saturation of the reservoir zone were predicted by the RF analysis, compared with those obtained by the DL analysis and validated with the core measurements. It was found that there is a significant improvement in the analysis running time and the accuracy of the RF-predicted well log answers compared to those results by DL analysis. It is therefore recommended that more applications of RF-based well log analysis be done for clastic reservoirs in Vietnam in the future.

Optimization of growth parameters such as temperature, pH and time of incubation as well as nutrient supplementation of cheese whey was carried out using response surface methodology (RSM). The proposed method is evaluated using real well log data collected in Cuu Long basin.   • The functional food development by adding probiotic bacteria is getting a lot of concern. In this study, Bifidobacterium bifidum AS 1.1886 was encapsulated in calcium-alginate 2 % w/v (C sample) or the mix of calcium-alginate 2 % (w/v) and whey protein 1 % (w/v) (CW sample) or calcium-alginate 2 % (w/v) coated by whey protein 1 % (w/v) (CcW sample) by extrusion method, and added to mayonnaise product.   • This study aimed to investigate the bacterial contamination of flake and cube ice being used daily in the community. Thirty-one ice samples were collected from different areas in the city of Can Tho, Vietnam. The enumeration of total aerobic mesophilic counts, presence of coliforms and Escherichia coli (E. coli) and determination of antibiotics resistance of E. coli isolates were examined. The results indicated that total aerobic mesophilic counts ranged from 2.5 to 6.

  • The present study was undertaken to evaluate the effect of different levels of Kumura (Benincasa hispida) on the quality characteristics of duck meat loaves. The Kumura was incorporated at three different levels viz., 5, 7.5 and 10 percent replacing lean meat in the formulation. The products were analysed for various physicochemical and sensory attributes. pH, crude protein, ether extract, and ash content of the products showed significantly decreasing trend with increasing levels of incorporation of Kumura.
