Nghiên cứu kiến thức, thái độ, thực hành về an toàn sinh học của 384 người chăn nuôi lơn và phân tích một số mẫu thịt lợn xác định tồn dư kháng sinh cho thấy: chỉ có 27,6% số người có kiến thức về an toàn sinh học trong chăn nuôi lợn; 51,40% số người không thấy được sự cần thiết của chăn nuôi lợn an toàn sinh học. Có 66,10% số người thực hiện sai cách dừng cám trước khi giết mổ. Thực hiện sai cách xử lý khi có lợn chết là 83,60% .

Ign (CNL) va phan tich mgt s6 mau thit Ign xac dinh ton du khang sinh cho thiy: chi cd 27,6%<br />
s6 ngudi c6 kiln thiic ve an toan sinh hgc trong chan nuoi Ign; 51,40% so ngudi khong thay<br />
dugc su cin thiet ciia chan nuoi Ign ATSH. C6 66,10% so ngudi thuc hien sai each dimg cam tmdc<br />
khi gilt mo. Thuc hien sai each xii ly khi co Ign chet la 83,60%). Ket qua phan tich 42 mau (thit,<br />
gan, than) Ign cho thiy: ty le tmng binh c6 du lugng khang sinh la 23,80%, trong d6 mau gan cao<br />
nhit 35,71% thip nhit la mau thit 7,14%. Lgn nuoi cdng nghiep c6 ty le so mau ton du cao hon<br />
so vdi lgn nudi ban cdng nghiep (38,09% so vdi 9,25%)). Ty le so miu tdn du Oxytetraxycline la<br />
19,04%o cao ban so vdi s6 miu tin du cua Tetracycline va Oxytetraxycline + Tetracycline (2,38<br />
va 4,76%)). Ham lugng tin du khang sinh trong cac mau thit, than deu nam trong gidi han ve sinh<br />
cho phep. Trong cac miu gan lgn, ham lugng khang sinh du thua vugt tieu chuan cho phep tu 1,05<br />
din 5,65 lin c6 fhl gay mat an toan cho ngudi sii dung.<br />

Summary<br />
PORK RAISER'S KAP AND RESIDUAL ANTIBIOTICS IN PORK MEAT IN THAI<br />
NGUYEN PROVINCE<br />
A study to evaluate biological safety KAP was conducted in 384 port raisers and to analyze several<br />
pork specimens to detect residual antibiotics showed that only 27.6% of raisers had knowledge<br />
on biological safety of livestock breeding; 51.40%) did not understand about a necessity of bio-<br />
logical safety for hvestock breeding. 66.10%o of raisers incorrectly completed the procedure of<br />
utilizing mash before butchering. Analyzing 42 specimens taken from pork, liver, kidney, we<br />
found that the average residual antibiotic rate was 23.80%), in which the highest was found in the<br />
sample of liver (35.71%)) and the lowest was in the sample of pork (7.14%)). The pig fed by the<br />
industrial food had a higher rate of residual antibiotics than the pig fed by semi-industrial food<br />
(38.09%) and 9.25%), respectively). The specimen rate of residual Oxytetraxycline of 19.04%) was<br />
higher than the residual Tetracycline specimens and the residual Oxytetraxycline + Tetracycline<br />
specimens (2.38%) and 4.76%), respectively). The amount of residual antibiotics in pork and kidney<br />
specimens was in the permitted standard. However, the amount of residual antibiotics in liver<br />
specimens was 1.05 - 5.65 times higher than the standard of JECFA and this was not safe for<br />
consumers.<br />
