Anthocyanins are colored bioactive phytochemicals in the class of flavonoids with high potential as dietary antioxidants. Demand for anthocyanins in functional food and nutraceutical industries has continued to increase over the past decades. However, sources of anthocyanins for commercial exploitation are currently limited.

Microalgae with their improved growth rates and accumulation of high-value-added products make their commercial production attractive. Among them, lutein, which is a carotenoid, plays a very important role due to its various applications in the food and pharmaceutical industry. Induction of its biosynthesis can be triggered by various stress conditions like light. In this study, three different light intensities (50,150 and 300 µmol photons/m2 s) and aeration rates (1, 3, and 5 L/min) were utilized to induce the lutein biosynthesis and biomass productivity in Scenedesmus obliquus.

Cyanobacteria are photosynthetic microorganisms capable of producing high value pigments like phycoerythrin, phycocyanin, allophycocyanin, chlorophyll and carotenoids. We study the enzymatic hydrolysis of lactose by a commercial enzyme from a selected strain of Kluyveromyces fragilis. The variables analyzed were: temperature (25–40 ◦C), enzyme concentration (0.1–3.0 g l−1), lactose concentration (0.0278–0.208 M), and initial galactose concentration (0.0347 M). On the basis of the data analyzed, both published and in the present work, we propose a Michaelis–Menten kinetic model with inhibition by the product (galactose), which reveals that the substrate (lactose) and the product (galactose) present similar affinity for the active site of the enzyme.
