The study aims to evaluate the degree of fat oxidation and the reuse of fried oils in fried meat and fish ball products sold in Ninh Kieu District, Can Tho City. The fat content was determined in fried products, as follows: fish balls (15 - 21%), beef balls (11 -14 %), and shrimp balls (15 - 23%).

In recent years there has been interest in the impact of nutrients on obesity and this has been addressed as a research topic. Bee bread is a bee product that has recently attracted attention with its macro- and micronutrients and the enzymes and biocomponents it contains. Changes in melanosis, microbiology, and fat oxidation in Pacific white shrimps (Litopenaeus vannamei) when treated with Houttuynia cordata extract (designated E-DC) were monitored during cold storage for seven days at 20 C. Whole shrimps treated with E-DC solution (0.025%, w/v) revealed slow growth of total aerobic microorganisms, Enterobacteriaceae and Pseudomonas aeruginosa, throughout cold storage in comparison to the control sample treated by water (p0.05).

Animals fed on concentrate-rich diets ( 60%), may go off-feed due to ruminal acidosis. A low pH is detrimental to the rumen fibre digesting bacteria which may cause a depression in fat content in the milk. It can also affect the animal’s health status. In such cases, use of a buffer is rec- ommended comprising sodium bi-carbonate and magnesium oxide (3:1) to be fed @ 50–75 g per animal per day. Alternatively it is possible to introduce some longer physical fibre into the ration (e.g. paddy straw) to promote rumination and saliva production.
