Cellulase, an enzyme that helps soften fruit peel, is produced by plants during the fruit ripening phase. Utilizing the immersing water from the white pepper processing to extract cellulase will help minimizing environmental waste and retrieving valuable compounds. Some factors affecting the cellulase yield from the immersing water of pepper were studied, including the degree of ripeness of peppercorn, immersing temperature and time.

This study was done to investigate the phytochemicals of plants of Ceratophyllum demersum grown in Lam Dong Province. Five compounds, cyclocolorenone (1), 1α-hydroxycyclocolorenone (2), lupeol (3), betullinic acid (4), and chakyunglupulin B (5) were isolated from the ethyl acetate extract of Ceratophyllum demersum.

Thin layer chromatography and column chromatography were performed from the ethyl acetate extraction of the bark stem of Phyllanthus acidus, and six terpenoids were isolated, including four diterpenes and two triterpenes. Their names were phyllanthol (1), 19-acetoxy-16α, 17- dihydroxy-ent-kaurane (2), 16α, 17-dihydroxy-ent-kaurane (3), 16α,17-acetonide-3αhydroxykauran (4), maslinic acid (5) and phyllane A (6).

This study aims to determine the various strains of yeast and filamentous fungi in traditional alcohol yeast cake from Hai Hau district, Nam Dinh province. By traditional laboratory techniques such as isolation on YPD agar, observation of colony morphology as well as cell characteristics by microscopy, combined with molecular biology method to sequence ITS region 03 strains of yeast Saccharomyces cerevisiae CN1, CN2, and NM3 were identified: 01 pseudo-strain yeast Saccharomycopsis fibuligera NM02 and 01 strain of filamentous fungi Rhizopus microsporus NS04.

In this study, Cat Hai fish sauce, one of the major traditional fish sauce manufacturers in Vietnam, was used to investigate the variation in histamine content during the fermentation process and to isolate histamine-producing bacteria. Quantitative reverse transcription PCR (RT-qPCR) paired with stem-loop was utilized in this study to establish a process for detecting miRNA-425-5p in human plasma, contributing to accurate prognosis and early diagnosis of genetic diseases in humans, especially cancer diseases. A total of 319 nasal swab samples were collected to clarify the prevalence and antimicrobial susceptibility of E. coli in the respiratory tract of goats in Can Tho, Vietnam. It indicated that E. coli was detected at a relatively minor rate (8.46%), and their prevalence in male goats and dairy goats was higher than that in others.
