The aim of this study is to obtain the copper-binding protein hydrolysate from the white leg shrimp head (WLSH) by-product using enzymatic hydrolysis. The outcome indicated that the copper-binding capacity (CBC) of the WLSH protein hydrolysate achieved the maximum value of 19.4±0.5 mg Cu2+/g protein with hydrolysis conditions including Flavourzyme preparation, pH 7.5, 50°C, the enzyme : substrate (E:S) ratio of 80 U/g protein and 5h of hydrolysis.

Three pectinolytic microbial consortia developed for faster retting of jute (Chorchorus olitorius L. and Chorchorus capsularis L.) were subjected to various pH (4 to 12) and media with variable nitrogen and fixed carbon sources for optimization of fermentation conditions of the consortia for cost-effective pectin degrading enzyme production. All the microbial consortia were active over a wide range of pH from 6 to 10 and recorded maximum polygalacturonase and pectin lyase activities at pH 10.

By pre-treating potato strips in different conditions of enzyme concentrations, pH, temperature and frying time, the effects of these parameters on acrylamide levels in fried products were evaluated by measuring UV-Vis spectra of sample solutions containing acrylamide. The maximum absorbance values at 224 nm were used to determine the acrylamide concentrations by calculation from a calibration curve.

Cellulolytic bacteria were previously isolated from the termite guts and efforts were taken to optimize parameters for cellulase production. Activities of diversity of enzymes which include, CMCase, avicelase and filterpaperase (FPase) were studied from crude cellulase extracts. CMCase activity was found optimum at different temperatures (35°C, 40°C and 45°C) at pH 7 and after 48 hrs of incubation time.

Proteases are one of the most important groups of enzymes with wide range of industrial applications. The soil isolate Bacillus cereusAG1 produced alkaline protease under submerged cultivation condition. Maximum production of enzyme was achieved at pH 10.0 and temperature 30oC at 120 rpm. The supplementation of fructose as carbon source and combination of beef extract, yeast extract and peptone as nitrogen source improved enzyme production by 1.39 times.

Amongst six natural lignocellulosic waste/raw material screened, millet straw contained maximum cellulose (30 %) and physical and chemical pre-treatment yielded maximum cellulase activity. The composition of millet straw showed 30 % cellulose, 10 % hemicellulose, 8.73 % total organic carbon, 0.7 % total nitrogen and 0.8 ppm phosphorous. Amongst four fungi of genus Aspergillus isolated from local soil dumps of kitchen and garden waste, Aspergillus flavus showed maximum cellulase activity on CMC agar medium and used for degradation of millet straw.

A study was conducted to investigate the peroxidase activity of graviola at different stages of fruit development at Agricultural College & Research Institute, Killikulam-628 252, India during March 2017. Stages have been divided into eight for the total period of 96 days considering 12 days for each. Three replications with eight stages were tried in completely randomized design for Total protein and Peroxidase activity. Total Protein content of Graviola at different stages of Fruit development is found to be statistically significant.

Effective invertase enzyme production was achieved with orange peel as carbon source compared to all other tested also residues. Among different nitrogen sources, yeast extract supported maximum enzyme production. Various fermentation parameters (pH of the medium, incubation temperature, time, volume in addition to carbon and nitrogen sources) also influenced the rate of invertase production. Maximum enzyme production of 55 units was observed in the medium of pH 4 containing 2% of orange peel having particle size of 3-1.

Xylanase is an industrially significant enzyme and its production from pure xylan is expensive. The objective of the current study is to utilise sustainable cost effective substrates -coconut oil cake, corn cob, sugarcane bagasse and water hyacinth, for xylanase production. Streptomyces sp. ER1 isolated from the sediments of Cochin estuary was used for xylanase production. The cultural and nutritional conditions for higher xylanase production using the four substrates were optimised using one factor at a time method. Data were analysed by one way ANOVA.

Suitability of 3 matrices, agarose, sodium alginate, and polyacrylamide, for immobilization of mutant cells of Pseudomonas aeruginosa MTCC 10,055 was investigated. Of these, agarose was proven to be the best as exhibiting maximum enzyme production (4363.4 U/mL), followed by polyacrylamide gel (2172.3 U/mL).
