This dissertation aims to investigate the electrical impedance properties of fruits and vegetables, and explore the relationship between impedance and quality criteria. In particular, the present dissertation outlines experimental research conducted on relationships between impedance properties and fruit tastes as well as the impedance changes observed during ripening process. Impedance measurement to monitor moisture content changes in the progress of drying is also included in this research.

In this study, salmon by-products were utilised to produce high ash content (AC) salmon bone powder (SBP) using hydrolytic enzyme and apply in the production of Tra catfish cake. The byproducts included 61.9 of moisture, 43.1 of protein, 45.4 of lipid, 10.2% of ash, 3.7 of calcium and 2.3% of phosphorus (on dry weight basis).

This study aimed to optimize additional carrier concentration for spray drying of Pouzolzia zeylanica extract. Response Surface Methodology (RSM) with central composite design (CCD) was applied for optimization and investigation of the influence of maltodextrin (5ö15%, w/v) and carrageenan gum (0.06ö1.0%, w/v) concentration on the physicochemical characteristics of spray dried powder (bioactive compounds, moisture content as well as particle size distribution).

Research, experiments and surveys on the flat bed dryer, focus on the cracks rice grains, and compare air reversal mode. A pilot study was conducted to assess the feasibility of composting of source separated organic matter of municipal solid waste (MSW) generated in low, middle and high income areas of Karachi city with a population over 14 million. Results of MSW analysis indicate the presence of high percentage of biodegradable organic matter (71-74%), acceptable moisture content (40-50%) and C/N ratio (38-40:1). On windrow composting, not only the volume of waste was reduced but also produced a crumbly earthy smelling soil-like, compost material.
