Results showed that increasing in rotational speed from 0 rpm to 200 rpm converted cellulose-producing cells to non-cellulose-producing ones, leading to a significant decline in BC film formation. The increase in initial inoculum size from 0.01 g/L to 0.1 g/L reduced sugar concentration and surface area of the medium, and therefore inhibiting the formation of film-like cellulosic biomass.

All the jam samples prepared from sweet potato were stored in sterilized glass jars and evaluated physicochemically for ascorbic acid, pH, total soluble solids, reducing sugars and non-reducing sugars, total sugar and sensory evaluation for an interval of 0 day, 30 days, and 60 days. For jam preparation treatment TSP-12-14 (100%) shows better biochemical retentions up to 60 days of storage along with good overall acceptability.

Experiment was conducted to study the nature and magnitude of genetic variability in twelve genotypes of apple for various horticultural traits during 2018-19 in Kullu valley agroclimate of Himachal Pradesh, so as to identify promising traits on which selection can be made. Sufficient genetic variability was recorded among the genotypes under study. Formation of reducing sugars during low temperature storage of red beet is detrimental for processing, consumption as vegetable and easily deteriorated when exposed to high temperatures. Most of the analytical methods are time consuming, cost effective and laborious. So, assessing internal red beet quality through statistical methods is alternative as mathematical modeling does not take error in to consideration. An experiment was conducted to study the effect of different organic manures on fruit quality parameters of papaya cv. Arka Prabhat. An experiment was carried out to study biochemical composition of different genotypes of tomato. A total of 22 genotypes were studied in which significant differences were observed for various biochemical traits among the genotypes. Genotype 2014/TODVAR-3 showed highest β-carotene (mg/100 ml) and lycopene content (mg/100 ml), whereas genotype 2015/TOCVAR-3, showed highest chlorophyll a (mg/100 ml) and b. The present study was undertaken to investigate the proximate, mineral and chemical composition of different parts viz. seeds, aerial parts and roots of garden cress (Lepidium sativum L.) collected from two different locations i.e. Hisar and Solan. Results revealed that all parts of garden cress were found to have good proximate composition. On the basis of calorific value, all parts of garden cress collected from both locations were found to be very rich sources of energy. Seeds, aerial parts and roots of garden cress contained significant amount of minerals viz. Fe, Cu, Zn and Mn.

The present investigation was aimed at studying the physico chemical, organoleptic and microbial characteristics of the spray dried banana powder across storage produced by Response Surface Methodology. Physico chemical parameters conducted on the optimized powder across three types of packaging materials revealed that moisture content increased significantly at 60 days (F=9.50) and 90 days (F=15.05) of storage at 5% probability level. Reducing sugar depicted a non-significant increase in all the three types of packaging materials.

Formulation of Jamun RTS, a nutraceutical beverage by blending Jamun with avocado and nannari, was conducted at College of Horticulture, Bangalore. The prepared Jamun RTS was analysed for physico-chemical characters and sensory quality at monthly interval for three months of storage. The TSS, pH, total sugars and reducing sugars were found to have increased during the storage whereas; acidity, anthocyanin, ascorbic acid content, total antioxidants, non- reducing sugars and the organoleptic scores had decreased.
