In this study it is observed that animals mostly slaughtered in different slaughter houses across meat related zones in Tamil Nadu are below one year of age which indicates consumers’ preference to tender meat over tougher meat from old animals. Hence a need based approach has to be made to improve the practices in goat rearing to attain desirable body weight at an early age which will fetch good returns.

To study the effect of different weaning systems on carcass traits of Tellicherry goats 42 Tellicherry kids were allocated to three treatment groups viz. Group 1- Late weaning (at three month); Group 2- Mid weaning (at two month) and Group 3- Early weaning (at one month). Different weaning system had non-significant (p>0.05) effect on pre-slaughter weight, empty live body weight, carcass weight, dressing percentage and carcass length.

The present study was undertaken to find the infection rate of Cysticercus tenuicollis in goats slaughtered at Bareilly slaughter house. The chemical and biochemical profile of thirty five randomly collected C. tenuicollis cysts was determined including calcium, phosphorus, glucose, creatinine, triglyceride and activities of two enzymes ALT and AST. Out of a total of 382 goat carcasses examined, 88 (23.01%) were found harbouring C. tenuicollis, with 86.36% in abdominal cavity attached to omentum and mesentry, 11.36% to outer surface of liver and 2.26% diaphragm.

There are various factors which affect the freshness of the meat the most important factors are storage temperature, time of exposure of meat to extrinsic factors and handling of carcass during and after slaughter. Hence a study was conducted to compare the microbial load in chevon carcass hanged at room temperature for 6 hours and at chiller temperature for 30 hours. Twenty four numbers of 6 months old tellicherry young male goats were selected and they were slaughtered by the standard procedure.

Listeria monocytogenes is an emerging foodborne pathogen of public health concern. Animals may act an asymptomatic carrier and can contaminate foods of animal origin such as meats and dairy products. The objective of the study was to determine the prevalence, pathogenicity and antimicrobial profile of L. monocytogenes in goats and pigs intended for human consumption. A total of 350 samples comprising meat, milk, blood, and faeces of goats and pigs were analysed.

A study was conducted to deodorize the rumen meat (also known as tripe) with different levels of coriander and sodium bi-carbonate separately to overcome its off odor and to increase the acceptability of rumen meat for product preparation. Rumen meat contributes 2.8% of slaughtered weight of goat and is highly nutritious but not popular due to its unpleasant odor and poor functional properties.

Lymph node involved in activation and maturation of lymphocytes and stimulates antigenic response against invading foreign substances. Supramammary lymph nodes had high significance in mastitis and other udder infections in small ruminants. For the present study, six supramammary lymph nodes of Madras Red ewe and Boer local she-goat were collected from Chennai corporation slaughter house. Histological and immunohistochemical observations were carried out. In both the species, supramammary lymph node was composed of two parts viz., parenchyma and connective tissue stroma.

Microbiological quality of goat carcasses at different stages of slaughter in Dallam island abattoir
A study was carried out to evaluate the microbial quality of goat carcasses at Dallma island slaughterhouse in Alzafraa District, UAE, during June 2017.
