By using the graphic theory the constant of reserve hydrolytic protein reaction catalyzed by papain have been calculated as follow: For the activation reaction: VM = 2.08 × 10-6 M.sec-1 , k2 = 1.04 × 10-1 .sec-1 , Ks = 1,79 × 10-4 M, = 0.265, KA = 1.54 × 10-4 M. For the inhibition reaction: VM = 0.67 × 10-3 M.sec-1 , Ks = 0.55 × 10-5 M, k2 = 33.5 sec-1 , Ki = 1.85× 10-3 M.

Động học ức chế thủy phân protein dự trữ, xúc tác bởi papain từ quả đu đủ xanh. The hydrolysis of reserve protein catalyzed by papain has been inhibited by Flavonoid. The inhibition was found competitive. Calculated constants of hydrolytic reaction have been estimated as following: VM = 0.67× 10-3 M.sec-1 ; k2 = 33.5 sec-1 ; Ks = 0.55× 10-5 M; Ki= 1.85× 10-3.
