This study focused on the development of a recipe for protein-rich nutrition bars (NB) using dried soybeans, puffed brown rice, and whole black sesame seeds. The NB, rich in protein, was made from abundant agricultural products in Vietnam, including soybeans, brown rice, and whole black sesame seeds, which can be a solution to utilize the available agricultural resources to create a nutritious whole grain cereal product.

The content of unsaturated fatty acids did differ between males and females of the two species studied. However, these differences are few and can be explained by the timing of their breeding seasons. The fatty acid composition of the fats from both investigated octopus species permits their use as food with nutritional value, and the production of bioactive additives.

This study has adopted a systematic approach to identify the extent to which 20 kHz ultrasound affects the particle size and solubility of different protein solutions containing 4%, 7% and 10% whey proteins, caseins or a mixture at a range of energy densities (15-400 J/mL) and various pH (4.0-9.0). Milk proteins hold a prominent place in the food industry as they are used in many manufactured products for their functionality and most importantly nutritional benefits.
