In this study, Cat Hai fish sauce, one of the major traditional fish sauce manufacturers in Vietnam, was used to investigate the variation in histamine content during the fermentation process and to isolate histamine-producing bacteria. Six Dich Chuop samples corresponding to the first sixth months from the beginning of fermentation were collected for these purposes.

This study aimed to isolate and identify marine fungi from Bai Tu Long Bay and assess their antimicrobial potential. We successfully isolated twenty strains of marine-derived fungi. The crude extracts from these fungi were tested against pathogenic microorganisms. All twenty strains exhibit some degree of growth inhibition against the tested microorganisms.

In this work, it was possible to observe the different profiles for the Pilsen, Witbier and IPA style beers, when quantifying the analytes methanol, ethanol, n-propanol, iso-butanol, 3-methyl1-butanol (iso-amyl alcohol), acetaldehyde, ethyl acetate and iso-amyl acetate. Pilsen beer, with low fermentation, presented the ethanol content in the same concentration range as Witbier beer, as expected, but with higher alcohols and lower esters than the other two.

This study was carried out to evaluate viable existence of Bifidobacterium longum BB536 during two weeks refrigeration of fermented goat milk supplemented with inulin and different cereal bran (Sorghum, Barely and Millet). Currently, the ability to convert raw materials from lignocellulose-rich biomass by traditional methods has many limitations. Therefore, the objective of the thesis is to exploit a variety of biocatalysts (hydrolases) from fungi to efficiently convert lignocellulose-rich biomass from ABP into sugars (C5 and C6) capable of fermenting for bioethanol production. The thesis uses "enzyme cocktail" synergistic catalyst to increase the ability of biological transformation.
