An investigation was undertaken during 2016-2018 to study the variations in biochemical properties among 24 jackfruit accessions of Assam. The biochemical parameters of the jackfruit pulp like TSS, reducing sugar, nonreducing sugar, total sugar, ascorbic acid and crude fibre showed significant variation among the accessions studied.

Dietary antioxidants (total ascorbate, α-tocopherol and total carotenoids) and micronutrient (iron, calcium, zinc, copper and manganese) content of 25 fenugreek (Trigonella foenum graecum L.) genotypes were evaluated under the present investigation. Higher α-tocopherol and total carotenoid content i.e., 43.080±1.542 mg α-tocopherol/100 g dry wt. and 4.890±0.047 g carotenoids/100 g dry wt. was observed in RMt-305. The genotype RMt-143 showed highest iron, calcium and manganese content i.e., 184.11±1.639, 781.20±4.790 and 25.65±0.695 µg/g dry wt., respectively.

A field experiment was carried out to study the effect of different methods and levels of zinc and boron application on growth and yield of rice under acid soils of hilly zone of Karnataka during Kharif season of 2017 at Sakaleshpura. The experiment consist of 14 treatments replicated thrice using RCBD. The present study intends to investigate micronutrient content of six commonly consumed greens namely Amaranthus spinosus, Chenopodium album, Spinaciaoleracea, Phyllanthus amarus, Talinum triangulare and Ludwigia adscendens after dehydration by using four different drying methods, i.e. sun drying, shade drying, cabinet dryer drying and microwave oven drying. Among the nutritional parameters, total mineral content, iron, calcium, potassium, phosphorous and ascorbic acid content was found highest in cabinet dryer dried samples, followed by microwave dried samples.

The present study was undertaken to study the nutritional composition of different varieties pearl millet. The nutritional evaluation indicated that the moisture content of pearl millet varieties HC-20 (bio-fortified), HHB-67 (improved) and WHC-901 was 7.41, 8.61 and 7.89 per cent, respectively. The protein content of HC-20 (biofortified), HHB-67 improved and WHC-901 were 11.95 g/100g, 12.48 g/100g and 11.81 g/100g, respectively. The present investigation aimed at evaluating the importance of ca based nutrient sprays viz., the Bio-efficacy of Megacal containing Ca, Mg, K, Zn, Iron and Cu, as organic product. The sprays were used on apple cv. Red Delicious for a period of two years at farmers’ field in district Shopian during 2016 and 2017. Healthy trees of uniform age (20 years) were selected. Cultural practices and plant protection measures were uniform for all the selected trees, irrespective of treatments. On each tree four branches from four sides were marked, for different flower and fruit observation measures.

The present study was under taken with the view to analyse the physical, nutritional and in-vitro digestibility of raw rice varieties. The results of the study revealed that HB-2 and HKR-48 rice variety had maximum length, breadth, thickness, L/B ratio, seed weight, seed volume, water absorption capacity, bulk density and true density than other varieties and porosity was significantly higher in Permal local variety than other varieties. The present study was undertaken to develop protocol for preparation of elephant foot yam papad, to assess the nutritional composition, physical characteristics and organoleptic evaluation of elephant foot yam papad. The papads were made with five different levels of elephant foot yam flour as 10, 20, 30, 40 and 50% along with control samples. The protein content in papad ranged from 16.20 to 22.50g, carbohydrate 55.60 to 58.96g, fat 4.21 to 4.50g, fibre 3.22 to 3.53g, calcium 140 to 158 mg/100g, iron 5.50 to 6.29 mg/100g.
